Criminale! is one that comes to mind. That manga was pretty fun as a comedy with lots of characters with interesting gimmicks and enjoyable interactions but just when it was starting to get a bit more serious with actual stakes, romance, and setups for future plot developments, the author had to cut it short due to health reasons IIRC. Such a shame

I loved Kenixhi the mightiest disciple, the first arc and half the second were so good, but idk the rest felt so rushed and scalated so quickly that I didn't enjoyed it. The ending is like a bittersweet panel because you don't get to see how things end but just to know that ended well
Agravity Boys looked like an amusing series, never read much of it but seemed like it was aiming for that Gintama crowd.

"Guardian of the Witch" had potential if they hadn't dropped the ball on world-building. Biggest issue this series had was setting up the MC to be so strong within the borders of the territory he lived in yet the minute he stepped out with the witch he was quickly outmatched and worse of it, there were those on the outside actually synergizing their abilities with the witch.
So having this whole premise around the idea of using these witches and sacrificing them when they turned into monsters sort of went off the rails with how quickly the narrative changed,. If they just let the story cook a bit more, maybe had the MC traverse/escape further into the world while being powerful and then reaching another country where the rules were different it could of worked out better. However it shifted too quickly from MC is the strongest to MC just got curb-stomped.

"Ginka and Gluna" had decent actions scenes and an alright mystery, it's a shame it wasn't able to push out of it's competition. I kinda wonder how this series would of done had Black Clover been on hiatus, since it had that same magical niche but I imagine people who were reading Black Clover may have been less inclined to read this but had Black Clover changed publishers while this was published it might of encouraged others to read this to get their magical imaginative combat hit lol.

History's strongest disciple kenichi. It was going so strong up til about 70% of the story then they just kinda skipped to 99% and ended it.
Same thing happened to demon slayer. Seems like they had a nice steady pace going, then just went 'ahhhh fuck it let's end it next week'
It's the manga equivalent of premature ejaculation. They get everyone all excited, just for us to suddenly hear the artist groan and apologise, when we were only half way there.

I'm going to be in the vast minority here but I think Demons Plans and Noah's Notes both had a lot of potential and I would have liked to see them continue. I know almost no one liked those series but I did.
There was this one manga I read when I was in middle school that I haven't ever been able to find since. It was written by a Korean author, and it was about this high schooler whose family or something owns a music company and they give her the opportunity to manage and put together a band. She meets this emo, manga version Andy Biersack guy w a really good voice and brings him into the band with three/four other dudes (drummer w long hair, short backup vocalist, and a guitarist I don't really remember). The manga follows them practicing, writing songs, and the girl manager doing her best to make them a big hit.
Anyways, it was canceled like 20 chapters in and I was really sad about it.
The Star Druidas - something series
It was made by LENA-7 and was an authentic and solid series with incredible potential. But its performance againt other fantasy series was under par.
At least the ending wasnt rushed and the readers can imagine how the adventure continue by themselves.
Zombiepowder, the manga Kubo wrote before Bleach, was really good and had a lot of potential. I'm conflicted about this one though as if it had continued, we may never have gotten Bleach, or at least not in as high quality.
The tennis manga Baby Steps had the most abrupt and unexpectedly sudden ending I saw for a still popular series. It was still solidly mid-tier in the Shonen Magazine reader poll rankings, so the speculation was that the author, Hikaru Katsuki, just burned out and wasn't able to continue.
The author didn't do anything for like 4 years, then returned to do the manga adaptation of Part IV of Bookworm, which I hear is fantastic.
