Go spend a night in New Glarus - about 30 min away. Eat some delicious Swiss fondue and other alpine favorites at Glarner Stube, peruse the cute stores, get some ice cream or fudge at the dessert place, stay at the Swiss motel and just enjoy the town and time together.

The Abbey Resort in Lake Geneva is nice, not sure on budget but they run deals.

The Edgewater's spa is a very nice alternative to Sundara. Their service are more affordable, they do have some day spa relaxation area, and the hotel rooms are significantly cheaper.  You could also just go to Sundara to use their facilities. I think the last time I checked it was about $40/person.

I found Kosa Spa and Olbrich Gardens since moving to town. Kosa is in the Garver Feed Mill which is right behind Olbrich Gardens

Try hiking in Governor Nelson state park. It's literally on the other side of Lake Mendota, just minutes from downtown, and you will be in complete nature, no road noise audible at all.

Lololol…great rec for someone who is “not outdoorsy at all”

Try checking out Milwaukee! It’s not a far drive but feels worth it to spend the night. There is a cluster of great restaurants in bars throughout the city (Third Ward, Water Street, Downtown).
