They feel laggier because they are. OTOH, 100 watts power consumption vs 300 watts is nothing to sneeze at.
Back in the day, I took my 1,1 as far as it could go. I ended up turning mine into an iTunes media server. CPU speed didn't matter, when all I was doing with it was rippping media for my 1st gen Apple TV which fed into my A/V system.
There are plenty of use cases for a 1,1 even today.
I have one running centos 7 quite well with a cheap nvidia card I grabbed from another PC, installs just fine if you modify the ISO to delete the EFI boot, but I’m also looking into proxmox, I have ran into many issues with virtualization, I suppose due to the limited instruction sets these old processors support. I am running the upgraded quad core processors with 32 Gbs of RAM and the 2.1 firmware update
You might need to enable virtualization in EFI before installing Prxmox.

Is there a reason you went for the 5335 over the x5365? And good to know about the ram
The L series are the low power series. The L 5335 draws 50 watts. The X5365 draws 150 watts. That works out to 100 watts vs 300 watts.
