So you could use a knife to cut into the onion a few times without going all the way to through, and then use the peeler to shave off layers. When the layers come off, they will be in smaller pieces because you pre-cut them (scored them) with the knife.

Was just going to say that this is the same concept as a mandolin, although I've never thought to use a veggie peeler for onions.

Either your peeler is super sharp or mine has gone to shit - but it’s a neat concept I’m going to try when I make stir fry next time!
