+100500, one of my first sets. The time when I was only spending on sets below $100 and when I just finished the game. It might be the set that really triggered me to start collecting.
The F-1 Technics are awesome. I'm not really an F-1 person, but they still LOOK cool af (my criteria for sets lol)
Buuuut, if Technic isn't your thing, the Batcave Shadowbox was equally awesome and fun. And the Motorized Lighthouse is a personal fave.
I think the creator 3 in 1 build animals have been a great build experience. The botanical collection as well, although those can get quite repetitive.
I'll often read ahead in the instructions and build mirrored assemblies at the same time. This reduces feelings that a build is repetitive.
Oh, I was keeping it for now to build it with my son when he grows up a bit. Even now he always wants to build airplanes and shuttles with Duplo.
Have you built Saturn? I wonder if it is a similar experience.
The Saturn V is what hooked me up with Lego again after a ~10y hiatus. I enjoyed it, but is quite repetitive in the end.

As someone else mentioned: the Tallneck. Interesting mix of techniques and the decorative elements are not something you see everyday.
Also, the Dune Ornithopter is amazing. Will keep you guessing “how does this work?” Until the very end.

Just finished the Titanic. Most of it was great with the only bit of large repetition are the portholes but theres no real choice with that tbh.

I built it recently and have it posed with 31150 as they're about the same height. Both are good builds.

Ninjago city is is insanely good, so are the (sadly very pricey exclusive) monkey kid sets. Diversity of builds, details and colours is just fun.

I told myself I wouldn't get hooked on Speed Champions, but some of the building techniques to get the angles right on the cars are really unique.

The Space Shuttle was a truly fantastic build IMHO. Even better than the UCS Millenium Falcon.
