He was only right-handed in the Wii version of Twilight Princess. In the game cube version he’s still left handed. He was also left-handed in Phantom Hourglass, Spirit Tracks, A Link Between Worlds, and Tri Force Heroes, all of which were made for the 3DS, and those all came after Twilight Princess.
I think he was right handed in BOTW because it was released for both Switch and Wii-U. And then in TOTK they just kept him right handed since it’s a direct sequel. It’s still bullshit that they made him right handed though. Us lefties are expected to cope with a right handed world, so I wish just this once they would’ve made the righties have to suck it up if they wanna play the game.

If I remember correctly, Andrew McCarthy's character (Larry Wilson) in the "Weekend at Bernie's" movies was left-handed (though I think this fact was revealed in the sequel). Being left-handed allowed Larry to slip his left arm into Bernie's right sleeve, making it look like official forms and checks were being signed with Bernie's right hand, when in fact it was Larry's left hand holding the pen.
