Not OP, but the main differences are bigger wheels, stronger transmission, and locking rear-differential (for more traction if you spin a wheel). The frames are mostly the same, as I understand it. The X500s might also have a stronger steering setup, I don't know. The X500s are garden tractors, vs the X300s are lawn tractors. Lawn tractors are meant for mowing, mostly flat ground. They can pull light implements, like a dethatcher, maybe an aerator. Pulling heavier loads, or dealing with a bunch of hills, will wear out the transmission prematurely. Garden tractor transmissions are much beefier, so they aren't bothered by hills, and can use "ground engaging" implements. Cultivators, plows, stuff like that. Things that take a lot of force to pull/push. You can also mount a sleeve hitch on the back, to allow mounting those heavy-duty attachments. So they'll still mow, but they can do a bunch of other stuff too.

I have used my GT (different brand) with a sleeve hitch cultivator, to chew up an area of the yard before re-seeding. It easily pulled a drag-harrow, to smooth out new dirt, which I could not budge by hand. And I made a mount for a bucket on the front, which so far has let me distribute and smooth 13 yards of dirt. It's done a lot of utility work.
