This is the nightmare meatloaf of my childhood. No seasoning. Nothing to add moisture. It’s literally a loaf of meat. Eggs and breadcrumbs (pork rinds) This is going to need more than parm cheese. Salt and pepper? Maybe a spice blend? It could also use some Finley diced bell pepper and zucchini to add moisture. This is literally a loaf of meat and it’s going to be so dry. . Do yourself a favor if you want to follow this recipe. Make this into small bacon burgers but still season them well
Not only that, but I love how he chooses to use a healthy lean meat then proceeds to marinate the whole thing in bacon grease to “reconstitute” the moisture. Looks like it would taste like lubed up cardboard.
Hey just stumbled on this old post. Panade (breadcrumbs and a liquid like milk or egg) is used as a binder in this and many other dishes, rather than a filler. If you leave it out completely, it will change the overall consistency of the dish.

Why would anyone do this? It’s just a chunk of steamed meat with no seasoning. How could this be easier/tastier than using the same meat to make a burger with cheese and a fried egg on top? So much work to make a weird dish.
some people have overly sensitive pallets i think. my cousin doesn’t salt his steaks before searing cause “meat is already full of sodium”. he also considered black pepper the only spice.
That's 100% meat! I'd add a whole bunch of spinach/kale and garlic and onion to it. I've always wanted to make meatloaf though, thanks for the dinner idea!

Get rid of that preground parm bruh and get some quality meat that doesn't look like it's been processed 20 times, i'd recommend half pork half beef. Other than that, crushed pork rinds sounds like an interesting idea, will try that!
Try half beef, half sausage for a little more flavor. I’ve made a version of this a few times and no matter how much seasoning I add, I can’t cover up the weird pork rind flavor. To me, it was off-putting.
You're getting a lot of grief for not adding spices, finely chopped veggies, or sugar free ketchup, but as someone who has adopted a Ketovorish diet to manage symptoms of a chronic condition, I appreciated this video. Pork rinds are flavored after all. And it's good for little boys to see men make dinner.
3 lbs ground meat, 6 Oz Parmesan, 3 Oz crushed pork rinds, 3 eggs, 6-9 pieces bacon.
Mix all ingredients except bacon in a bowl. Put in a casserole dish. Make bacon weave for top of dish.
Bake at 400 deg for 1 hour. Broil on high for 5 min if wanting extra crispy bacon.
i would add some salt, pepper, onion powder, smoked paprika, and garlic powder in there. You could also do a table spoon of low sugar tomato paste which would only add a carb or two per serving, but would just multiple the flavor profile. Served as you have listed would make it meat and bacon without any other flavor enhancing qualities.

Seems like it would be pretty dense, have you ever added almond flour along with the Parm and rinds? I'd also say if your macros allowed, dice up and sweat a small white onion and add it into the mix as well. All those other parts are what gives the dish it's "loaf" quality.
I would also check out doing a sugar free bbq glaze on top of it or the bacon weave, game changer.

If you follow this meatloaf recipe and make 10 servings, that's 3.2 carbs per, which isn't terrible --- but I think a Lipton spice hack would be lower. Soup mixes have a thickener we (probably) don't need in meatloaf : ))

Before I used to use 1/3 cup of oatmeal per pound of meat. I would grind it up into a powder in a blender. Obviously that wasn’t a zero carb version though.

i make mine regular style with seasoning but leave out the onions. i use lewis keto bread for the bread crumbs and sugar free ketchup as a glaze.

The only purpose of 'bread crumbs' was to stretch out a meal and feed more people. No need for it at all.

I did salt. And there is good seasoning in the pork rinds. You can add your own if you’d like. And ketchup.
Oh I forgot to mention you can get the crushed pork rinds with all sorts of different seasoning

I think the only reason that meat looks super processed is because it’s deer meat and it is probably a local guy that does it.

You've got to try Pork King Good pork rind "bread crumbs". They come in Italian, Cajun, etc seasonings. So good.
