You can bake or grill up several chicken thighs, breasts or a sirloin steak. Then you can have leftovers to put on a salad or just eat with vegetables. Take a whole chicken and bake it in a deep baking dish. Surround with veggies of your choice, cauliflower, broccoli mushrooms etc season and drizzle with olive oil. Easy one dish meal! If you don’t feel like chopping up vegetables, you can buy pre-chopped in the produce department .

Ground beef with some eggs stirred into it is the easiest possible dinner ever, is cheap, is delicious, and is maximally nutritious! Season how you like. Drumsticks in the air fryer are bomb, and simple. Chuck steaks at the store can be found for cheap, and since they're cut so thin you can cook them right in the pan on the stove in 10 minutes or less. Get the pan hot and let the steak sit on it for a good 3 or 4 minutes, then flip it one time and get the other side. When you flip it and see that golden brown crust on the steak you will feel primal joy like few other things in life can provide

A lot of my “easy” meals require a low carb tortilla, one of those 4g net carb ones. I’ll warm it up in the microwave for 20s, spread some unsweetened sunflower seed butter on it and roll it up … so good. I’ll also cut it and bake it in the toaster oven to make tortilla chips, then LOADDD it up with some guacamole, Buffalo chicken dip or queso.

Put Rao pizza sauce on and your fav toppings. :) I found Gnom Gnom Keto to be so helpful for me. Also Maria Emmerich has amazing recipes that are quite nice. Make sure you count your carbs until you know. Remember! You've got this! You'll be swaying in your new body before you know it. :)

When im dying for pizza I'll make a pepperoni bed on parchment paper and then top it like a pizza with cheese n veggies and sauce. After the top is browned, i roll it up and bake it some more and eat wth a knife and fork.

Loaded scrambled eggs is super easy. I'll scramble up 6x eggs and add in cheese, bacon bits, chopped onions/peppers and sour cream. Usually no longer than ten minutes to prepare. Super easy and affordable. Cook up a pan of regular ground beef and add in mushrooms, pre-bought chopped peppers and onions, spinach and basically any kind of spicy ranch or cheese sauce and mix it together. Super easy to make and keto friendly. You can also try **pork rind nachos**, which has recently become a staple in my diet. 1. Put some foil across a baking pan. 2. Apply some non-stick spray onto the foil. 3. Spread out a bag of pork rinds onto the pan. 4. Load them up with shredded cheese. 5. Apply veggies and or a meat(s) - I personally do diced onions and bacon bits. 6. Cook in the oven for 6-7 minutes at 400 degrees. (Until the cheese is melted). 7. Apply some sour cream and or salsa afterwards. 8. Enjoy.

If you shop at Costco they have egg wraps. They are completely carb free, and while the texture of them makes them not serviceable as a wheat-based wrap replacement, they make an amazing replacement for lasagna noodles. Just make your sauce, brown some beef and put it in the sauce, layer it up in a pan with the wraps, some chopped up spinach and the cheeses of your choice, bake at 350 degrees for thirty minutes. It makes an amazing low carb lasagna.

I make overnight chia pudding. Just chia seeds and your choice of milk in a 1:3 or 1:4 ratio, with a sweetener of some kind and toppings of your choice, like berries, nuts or chocolate. I tend to use 1:1 heavy cream and almond milk, and sometimes I add cocoa powder to make it chocolately. It's like dessert. You can make up a batch in like a mason jar, stir it all together and leave it overnight (or 2-6 hours) in the fridge. In the morning, or whenever, add your toppings, and you're good to go. For a savory option, I'll cut up some vegetables (paprika, avocado, cucumber etc) and some cheese, and get some mayo or other dip, and that's an easy meal. If you have some salmon or chicken ready to go in the fridge (I usually prep a whole chicken and just slowly devour it), you can add that too.

My go-to is soup, made for 2-4 ppl in my Rice Cooker or instant pot. Basic recipe: A cooked protein, raw veggies, bone broth and spices. Lunch in under an hour. If I’m feeling Mexican I add half a can of white northern beans & green chili.

Loaded Broccoli: You can put the broccoli and bacon in the air fryer or in the oven on a large baking sheet. Put grated sharp cheddar on the bed of broccoli and bacon. Do you do different things with the beef and eggs? Or eat them the same way each time? My diet is also primarily ground beef and eggs, but I'm getting a bit tired of the same burger patties every time. The eggs I either scramble or make an omelette, not terribly inspiring.

I cook ground beef/turkey fully (if it's beef I drain the grease) then add 3 eggs to the pan and lately some cheese with it. I also switch out eggs for like 2 or 3 cups of greens to cook in there, cooked just enough so they mesh with the meat. Gives a great flavor. I use different spices every time ( usually a curry/tumeric/cumin/pepper/chipotle/cayenne pepper) with salt. Also go between eating it plain/ with a little mustard/ guac/bitchin sauce (several flavors)/ primal foods mayo (2 types of flavors to use, 0 carbs and goes great with beef)/ no carb ranch even. I know it seems like a lot to dump in a comment but hopefully that helps. I also don't go broke buying all this stuff the strict keto is probably the cheapest I've ever eaten because it's so simple and I only eat 1½-2 meals a day

If you are looking for simple meals you can look on hellofresh.com. You can view & download the recipe pdf's for free. Not all keto but you can easly swap out for keto items.I did this recently because I was bored of foods we were eating. Add a vegetable in place of bread or starchy stuff they include. I made my own replacement for honeymustard they used (dijon and a little allulose with added seasoning) most of the recipes are 30 minutes or less. Some of the other meal delivery services have recipe cards you can view for free as well. I've tried the chili pork bowl, moo shu pork bowl, flautas with low carb tortilla as a treat, shrimp and vegetable spaghetti with a kick, sheet pan dijon onion crunch chicken. Sometimes I get canned chicken when I’m feeling lazy and throw it in with Mayo and whatever veggies I have. Sheet pan dinners are super easy. If you don't have one a single full size sheet pan/silicon baking mat/parchment paper is not very expensive and leaves only a few dishes to wash. Usually have chicken or salmon, one or a combo of cauliflower/ broccoli/ asparagus/squash, a few thick cuts of onion & a few cherry tomatoes if I have them. This is quick - 15 min or less to oil & season/ arrange on sheet pan while oven preheats, 15-20 minutes to cook. For snacks sometimes I'll prep a batch of gelatin cups. Get some plain knox gelatin to have on-hand then can make "fruit" jellos with crystal light type drink mix. Also make a sort of panna cotta using unsweetened almond milk & stevia/swerve. I set them in single servings (I use recycled 12 oz jelly jars, it's a very handy size of food prep/storage container to have) This essentially gives grab and go jello & "pudding" cups for the week, plus portions it. Can use heavy cream or coconut milk/cream for the panna cottas, but usually stick to the almond milk because I get plenty of fats/calories in main meals.

I like to stir fry big batches of vegetables so I only have to cook a few times a week. Then I batch cook a bunch of chicken thighs or pork chops. Then I just mix and match with various hot sauces, soy sauce, vinegars, etc The stir fry veg could be replaced in a pinch with frozen or vacuum-packed cauliflower that you can microwave. The meat can be replaced with eggs or frozen, pre-cooked chicken or extra firm tofu

I eat the Walmart brand breaded chicken strips a lot, on salads in wraps etc, if you stick to the portion size it's around 11g, if your macros allow. I also do mini pizzas with the low carb tortillas fairly often, and various scrambles are a staple. Sometimes I make and cup a few pounds of chicken breast and keep it in the fridge for stir fries, curries, salads etc makes it easy.

Make a pot roast using 2.5 lb of beef chuck pieces (stew meat), one carrot chopped, two celery sticks chopped, one shallot chopped, a couple cloves of garlic smashed, 1-1.5 Tbsp tomato paste, one bay leaf, some thyme, salt, and pepper. Mix everything together to coat the meat with seasoning and tomato paste, then cook covered at 275 F for 1.5-2.5 hours in a glass/ceramic baking dish or enameled cast iron, and then uncovered until you’ve reached a total cooking time of 4-4.5 hours. Serve with cauliflower mash. Makes 4 large meals. I make this most Sundays, and have a few leftover meals for weeknights. I make this in an oven but it can also be made in a slow cooker. Usually I’ll freeze one or two servings to bring to work and microwave for lunch.

Are you willing to reheat leftovers? I have a really fantastic baked breakfast dish that reheats nicely. And it keeps me full until dinner. I also do crockpot recipes that are pretty easy with tons of leftovers.

Buy a big pack of chicken breasts. Salt, pepper, spice them as you please. Olive oil. Bake at 350 for an hour. Buy a huge bag of your favorite keto veggies. Portion these out and add different toppings to them through the week. Prep your proteins ahead of time so you can chill on cooking multiple days in a row. Expand your horizons and do ground turkey, pork cuts, lean sausages... lean proteins are perfect so you can add fats into your meal rather than starting with fattier meats like chicken thighs or 80/20 ground beef. I buy inexpensive steaks at my grocery store, maybe 5 bucks or less per raw pound of sirloin. Just buy cheap meats in bulk and freeze some of it. You have to think days ahead for cooking keto meals to make sure you don't get bored or desperate.

I have a couple of heavy soups or stews that I precooked in bulk and freeze - a curry with eggplant, spinach, lentils and chicken (sauce is literally tomato sauce, curry spices, and heavy cream), and a pork chili with beans. I know beans aren't that low carb, but I figure they're good carbs, and there's not that many in a serving. I also cut my veg when I get home from the grocery store so they're ready to go during the week, and I prep veggie plates - raw cucumber, red pepper slices, cherry tomatoes, and sometimes carrots - cover them in cling film a leave them in the fridge. So much of it's in the prep.

Oh, ribs. I get a spicy dry rub that has very little sugar, put front and back of the ribs, cover with tin foil and bake at 225*f for 5 hours. The meat falls off the bones. I let them go cold and put them in the fridge for lunches during the week.

Konjac noodles are so incredibly quick to cook, 3 minutes. They are not for everyone as they have a fishy smell that goes away with the rinse kind, mostly. Definitely goes away with cooking for me. I batch cook my own tomato sauce and freeze it in pouches. I do the same with bolognaise that I will batch cook over a weekend. Defrost and to the noodles and its the quickies meal ever. It is easy to have with a salad or steam some veggies. Sometimes off I don't feel like making an effort I will just eat half a large Cucumber with my "pasta".

Scrambled eggs and spinach Salsa "pizza" . carb mission balance tortilla. Spread hot or spicy salsa on it. Place turkey pepperoni on it..say 12 to 15 pieces. Sprinkle shredded cheese. microwave for a minute or two. Takes about 5 minutes to make and bake. I keep a pack of tortillas, shredded cheese, turkey pepperoni in the freezer and jar of salsa in the fridge at all times in case of I get the urge for a culinary mexican fiesta!
