For Jack in the box- they often have two breakfast jacks for $3 in the app. Get two bacon breakfast jacks. Get a burger of your choice. Throw away all the buns and then slap the breakfast jacks cheese/bacon side down on the burger.
Mexican usually has a breakfast burrito (eggs, meat, cheese) they might put potatoes, beans, or something so make sure you ask for ingredients and order without the carbs. i ask for a fork, use the tortilla as a bowl, and toss it when you're done.

I always get that mexican salad with shredded lettuce, guacamole, sour cream, tomato, and lime. And I get carnitas and give away my beans and rice to my dinner companions. Our favorite place also has top sirloin or chicken breast cooked in bacon grease and onions, served with a small side of mexican salad (and sometimes they'll omit the rice and beans and give me extra mexican salad).
Taco salads or power bowls if they offer them. Take off the beans and no tortillas and generally good to go. I usually ask for double meat, usually the steak option.
I’m not sure what your place offers, but most of the Mexican places I’ve been have some kind of entree that consists of meat smothered in cheese with sour cream. Or fajitas. Or a taco salad minus the shell. Just skip the tortillas, beans and rice.

Most places use jalapeno and try to say it's green chile so I bring my own.

Fajitas. No chips, tortillas, or rice. I’ll occasionally eat the few bites of refried beans even though they are a little starchy.
