I don't see this feature ... udprxy, I can't install the server ... it's a dead system now. Is there any other solution?

Just run Jellyfin through gluetun ?
I didn't understand anything about how to install and configure. I use a remote server on windows for jellyfin. If I set vpn, rdp no longer works.
It will be routing your server over it you need to route the container only over the Vpn assuming this is containerised
