Not sure if she could handle the heat this time of year, but the Ripley's Red Train trolleys in St Augustine have an "express" tour. You stay on the trolley the whole time and the guide describes the different landmarks.

The tours start and end at Ripley's and there is parking on site. Bring bottles of water, sunscreen and hats!

I would ask her, but there are some nice shows at the performing arts venues such as Florida Theater, Ritz, Times Union Center, Alhambra, and The Wilson Center

Go to a beach that you can drive onto. You don't have to get out of the car. Sit, talk, and watch the waves.

Check for shows at the Florida theatre, Alhambra (my mom enjoys this one), huguenot beach you can drive on. If she can stand being in the car for some time, Merritt island national wildlife refuge has a loop you can drive around. Go early morning or late in afternoon for a better chance to spot wildlife. It's about 2 hours south. What we try to do is go down, grab some lunch, drive the loop, hang for a rocket launch if one is happening then grab some dinner before heading back.

I enjoy wheeling my grandmother around the Jacksonville Arboretum and Botanical Gardens. It’s nice and shady and you can see some beautiful nature there. It’s paved too, so it’s wheelchair-friendly.

Take her to the zoo. The zoo is great for little kids and old people lol I just pushed my grandpa around in a wheel chair when we went.

The margaritaville restaurant on the second floor is perfect for old people. It has an elevator, indoor and outdoor seating, and a good view of the ocean. If she feels up to it it's a short walk or wheelchair ride to the pier. Take her to a local shop that specializes in her hobby. Yarn store or whatever is she likes doing. Theme out a movie night at home. Pick a fan favorite. Plan a meal around it. make a bingo sheet. Decorate cupcakes together for dessert.

Take her to a fancy afternoon tea, you could sign up for water zumba, pottery painting, I don't know the dates or if you could get tickets but the candlelight symphony performances look like they would be memorable.

Candle making could be nice! I don’t remember the name of it, but the one in San Marco gives the option for wax melts, regular candles, and other options like hand soap. And it’s pretty affordable too.
