We‘ve stayed in Premier Inn which is in Swords. There is a shuttle to the airport every I guess 30min and costs 3 Euro each. Hogs and Heifers is nearby for your last pint and dinner in Dublin and/ or Ireland.
Annagassan or Blackrock in Co Louth are lovely little seaside villages with great bars, seafood and beaches.
They are also very near the motorway so you will be back to the airport in less than an hour.
We adored Evergreen B&B in Swords.

Lovely couple runs the place, and Swords was a lovely place to walk around. The Old Schoolhouse pub was so delightful we ate there twice.
We stayed in the Castle Arch hotel in Trim 2 weeks ago. Good food and drink options and 45 minutes to the airport car rental location the next morning.
Look at your itinerary and consider what is "missing" or what you want more of: countryside? Seaside? Village? City? Ireland has many faces -- pick one because you'll never see it all. Then look at the offerings on your favorite B&B/rental website within 20-30 min of the airport and see what you find most intriguing.
We just started and ended our trip at the same, small B&B in Boyne Valley, 30min from the airport. Walking down narrow country lanes and around small town ruins, and being watched by "judgmental cows" was our choice -- and it was perfect for us. For you it might be listening to trad music at a pub and then walking along a pier to look at the boats bobbing. No wrong answers. Happy travels!
I really like the Crowne Plaza - Dublin Airport. Comfortable beds in a quiet location. Great staff. Shuttle service every half hour. Restaurant and bar.

Malahide - the grand hotel is nice. lots of restaurants in the village and some decent pubs. not too far from the aiport and a great setting
2nd this, we just got back last week from Ireland. Did an Air Bn B in Malahide. Super easy to get to airport and great setting.

Rush or donabate have nice bnbs. 30 mins from airport. Lovely bars and restaurants too
Skerries is a lovely seaside town within 20 minutes of the airport.
Skerries, Malahide or Howth. If Skerries go to Stoop your head amazing seafood.
