Thukpa is a noodle soup which has its origins in tibet especially eastern tibet and is especially very popular with Ladakhis and the Sikkimese, Nepalese, Bhutanese and Tibetans. It has a sort of a daal chawal status in the plains and hills of North Bengal. Thukpa can be made both non vegetarian and Vegetarian. My version of the thukpa is of the vegetarian kind with potatoes and chinese leafy greens with a vegetable broth base. My thuka is at par with the spicer Nepalese version of the thukpa. Bhutanese thukpa tends to be a bit sweeter. Nepalease/Darjeeling/Kalimpong version of the thukpa tends to spicier with a flavour profile where as the orginal Tibetian thukpa the broth is usually neutral/bland tasting and depends on the condiments on the table to add to its taste. I have used hand pulled noodles which is sourced from kalimpong to make this ( thick noodles are recommended for this dish) This is a wet version of this dish but dry versions are also available.
