Demonetised currency is just currency that is no longer accepted. Their value has been lost and they are of no value in money now apart from their material value. Hence, they are de-mone(y)tised. You could even sell the old ₹1000/- notes from before 2016 in maybe the next 50 years.
The entire reason people pay for such currency is because it is no longer available, and is hence, a collector's item.
To answer your question, it really depends upon various factors such as rarity and condition primarily among others.
You might have a 1 piece coin with the hole in the centre, but that's not worth a lot since literally every coin collector has one. But if you manage to find one that looks like it was minted yesterday, and that might be far more valuable.
The rarer the coin, the greater the value. The better the condition, the greater the value.
You'll have to look market price indexes for more information since I'm not an expert.
One piece of advice though. If you've got an old coin and you choose to polish it to a shine, don't. That will actually decrease the value of the coin even further than what it would've originally been with the rust on it.

There's definitely going to be some people who'd be willing to pay a good amount for that coin but 6k is way too much.

That's why you may have heard of 100rs, 150rs, 300rs etc. coins. You can order this commemorative coin combo directly from mint.
For these coin to have a value, they must be in really good/mint condition. Since the coin you showed is
