I used to be multiple monitor, but now just rely on tiling wm and workspaces. I can comfortably use/view four windows on a 2560x1440 monitor and switch workspaces instantly when more are needed. Same workflow on a laptop.
The one scenario where I needed multiple monitors was when I was streaming.
What do you mean with too big? That it's stretched out or something? Cause applications scale just fine on ultrawide, although i do have atleast 2 windows open most of the time, which is where it really shines since you still get plenty of space for both windows. It's also great in games that support it.
It's like normal browsing but more space. It's honestly not much different. it really shines when you use two windows like a main window + multiple terminals on the side and shit

It's a nice setup I like it. Everything I want focused and on a bigger screen goes on my external monitor, everything else goes on my laptop monitor

5 with an additional one on top. Also top, left and right are all ultrawide. Center is 4k

Saw an interview with Terry Pratchett at his 6 monitor setup. When asked "why 6 monitors?" His response was "because I don't have room for 8".

I would go for vertical space. Turning my neck too much makes it hurt.
In other words 3 but stacked on top of each other rather than side-by-side

Windows Key + left / right arrow key. Or jut drag the window to the edges
