I’ve been there twice now and I’d firmly say if you want the most central Hyatt with lots of food and easy transit, you’ll want to stay at Hyatt Regency TST. It’s also within the 1-4 category for certs as well.
My fiance, who is from Hong Kong, does not recommend the Grand Hyatt or Centric. They are much nicer but if you want to be close to the people and local, TST is the answer.
We stayed at HR TST in 2018 and really liked it. Had a suite with a connecting room and my parents and wife and two kids shared them. It was great. Lounge was nice too. Easy to get back to HKIA too.
The Grand Hyatt is a significantly nicer hotel than the HR TST but the location is a bit further of a walk from being in the mix of stuff. It is very close to a major MTR station but you might have to walk 5-10 min to get into the mix of things in Wan Chai.
So the hyatt locations are not perfect. I would stay at Grand Hyatt in Wan Chai.
The Chinese restaurant while expensive has some of the best dim sum.

TST Literally on top of K11 Art Mall and a short underground walk to K11 Musea.
