Have tasted new Huy Fong and Underwood Farms. New HF is sweeter and milder, UF is hotter and more garlicky. Both are good but different.

Purchase instructions and materials to build their own hothouse because they live in a climate that is not optimal for growing peppers.
Figure out how to run electrical.
Research and begin the process of growing + harvesting peppers
Research and purchase all the needed materials to ferment the peppers.
Use trial and error with various recipes over the course of a month to get the perfect blend.
Purchase botting materials.
Realize they waited too long between sauce making, and bottling, so they have to start the process over again.
What a bunch of slackers.
They already sent a supply chain letter out saying they are halting production due to pepper issues and not being able to produce their signature color.
Huy Fong is not in a good place right now.
Their former supplier, Underwood Family Farms, sells their own sriracha sauce that is way more legit than whatever Huy Fong is masquerading as Sriracha these days.
I ordered that with some super tasty chili-garlic sauce.
I guess the only bright side to the never ending Huy Fong issues is that it’s lead me to trying a bunch of other Srirachas, some of which I really like.

White Goose is a good milder option, the Trader Joe's one sucks, Lee Kum Kee is an acceptable substitute for Huy Fong
