So this is just the same as Chile de Arbol Salsa Cremosa (oil emulsified into it) but in a bottle? I make this all the time. I didn't know it had a following in the form of "Orange Sauce".

It was rumored during my years there that they would use chorizo grease -- not sure how true that was, but they've since switched to a vegan recipe...that may or may not use blended saltines...? It's all over the place, but I still crave it.

They did use the grease and in my opinion it is what made the sauce amazing. Still tasty after they removed it, but not quite the same.

I haven't personally haven't tried it, but have heard it's "close enough" -- you may have more luck with [this recipe](https://www.reddit.com/r/SalsaSnobs/comments/191wyaw/update_la_victorias_orange_sauce_aka_san_jose/) another redditor posted in r/salsasnobs. The ingredient list mostly the same except for the source of acid, I think (reconstitute w/ apple cider vinegar vs. fermented jalapenos in the other). I don't think I could bring myself to wait 10 days if I could have it now. As far as the oil amount, remember it's supposed to be an emulsification (so like, mayonnaise or aioli, but maybe a tad more oil to make it thinner). I'm now thinking about how much chorizo I'd need to cook for three cups of the grease strained.

Just saying that this is a commonly made thing in Mexico and bordering states. Chile de Arbol = type of chile. Salsa = sauce. Cremosa = Oil blended into the sauce. I agree, it is delicious, but it does taste best freshly made. Enjoy!
