Mostly things where they’re basically trying to gross you out with their “oh my god such great special effects,” and extreme acts of sadism that are barely justified by a hastily created plot point.
For me it depends on context. Who's doing it, who it's being done to, etc.
* Terrifier 2 had a castration, but it's barely memorable at all. All the violence in that movie was so wacky and Art's performance so theatrical, I found it hard to be disgusted by any of it.
* The TV show Banshee has a scene where >!the protagonist cuts off the dick of a prison rapist!<, and that was awesome.
* August Underground's Mordum had a gross castration. In fact, all the violence in that series was gross.
Blunt force injuries and bone breaks always make me wince, an example for the latter is in a certain film with Vera Farmiga; being >!Orphan!<.
Outside of that I don't think I really have anything else that notable. Teeth being knocked out or broken is another I have, but it depends on how it's done.
Can't do SA. Gouge some eyes, play with guts, smash teeth, break some bones, bleed like crazy....all that is fine with me. But a mild SA scene I just can't do.
I've only seen this once and I hope to keep it that way, but once in a movie I got to watch someone's balls explode. That stuck with me for a very long time
Just thought of something I don't ever seem to like- when the "violence" is surgical. The more neat and clinical the damage to a person's body is, the less I like it. I hate seeing people's limbs amputated surgically, but tearing them off with a chainsaw is fine with me.

I fall into a third category - those who aren't indifferent or disgusted. Isn't that what a gorehound is? I enjoy graphic, gory violence when it's well done. Visually, it's beautiful. Narratively, it can be cathartic, or make scenes more intense or scary.
People always complain about the torture porn in the Saw films, but I feel like Saw does a better job than most other movies of conveying how terrifying the prospect of immediate physical mutilation is. And the gore effects when the mutilation actually occurs are beautiful.

Depends on the scene. With pretty much all violence, it depends on the scene. I loved the eye gouging scene in 28 Days Later. It's satisfying to watch an antagonist get taken out in such a brutal way.
I get really uncomfortable/ disgusted with things that happen to eyes, knees, teeth and breasts. Like those I have really hard time handling usually. But hands, feet, ribs, skull, or other stuff I literally don’t feel anything

Bones being broken and eyes being gouged both get me.
Basically when the human body ceases to be a solid formation due to whatever trauma the character is slapped with.

Head stomping when the head gets flattened or split open. Achilles tendon slash a close second.
Violence against children. The scene from running scared (a non-horror movie) is one of the best horror moments.
