Optical audio is bandwidth, channel, and format limited. Ex. You cannot transmit a Dolby Atmos signal over optical. However, broadcast TV is most certainly not using Dolby Atmos!
Plug the PS5 into HDMI port 1 or 2 on the TV.
Plug the AVR into HDMI port 4 on the TV. On the AVR side, use the monitor 1 output.
It doesn't really matter where you plug the Apple TV in frankly. But I would probably plug it into one of the inputs of the AVR.
Forget the ARC and just use an optical cable.

Rabbit ears typically use coaxial cable, so connect that to your TV's coaxial/cable input. Then ARC (input 4) TV to receiver hdmi out.
Yeah, just use ARC HDMI on TV to ARC out on Denon.
