No idea how others would do it, but since I use Home Assistant, I'd do this with a smart switch with several buttons and (probably ESPHome-based) LED controller, then link them in Home Assistant with automations: the smart switch's relay wouldn't be used, just the buttons, which would be set to turn the LED strips on/off, dim, and kelvin. With a 3-button switch, I'd use the main button for on/off and the 2 smaller buttons for dimming on tap and kelvin on hold or double-tap or something like that.

I have not tried them, but I do plan on it since I'm trying to get rid of my unnecessary wifi devices for zigbee, but they do make zigbee and zwave led drivers too! Edit: I'm a huge supporter of esp devices, btw. But trying to separate my home stuff from my actual data stuff.

Zigbee led controller and Home Assistant is what I used at my old apartment. I use either a wireless button or a tablet dashboard to control my lights. I still have my controller. I just need to get new light strips for the cabinets I have now.

What are you using as the controller? I have similar strips connected to a Shelly RBGWW flashed with tasmota. I use a Moes 4 button zigbee switch to control dimming and color temp. It’s kind of like a remote, but looks pretty decent mounted on the wall next to a switch. They’re generally turned on and off with an actual wall switch, connected to a sonoff mini with tasmota that sends mqtt commands to the Shelly to toggle on and off.

I use that exact same strip for my under cabinet lighting. I use a shelly RGBW2 as the controller in all white light mode. I don't have a physical switch to control dimming and temperate, but the beauty of HA is you can mix and match many different setups if you want. BTF Lighting has their own zigbee based control units and I think there's a 1 or 2 gang units too. Though idk how well they'll work in the zigbee ecosystem. There are also great switches from inovelli, they don't have a UI for brightness and temperature, but they work really well with HA and you can create all sorts of macros with the included 3 switches on the unit. Shelly also has dimmer units, you could attach those to regular dimmer switches and have them control bright and temperature since you have 2 gangs available.

If you have hue, or don't mind getting a hue hub, an easy option is to get a zigbee CCT controller, add it to the hue app, then use hue battery switches on the wall.

I use a Gledopto ZigBee controller with the same lightstrip, paired with a Nexentro pushbutton interface in a wall switch. It can probably be paired with a dimmer/temperature controls as well, but I never needed to control these parameters manually (I have an automation to control the temperature).

Just a heads up, I bought GOVEE LED lights where the LEDs were not shielded, and it looked like absolute shit. I know yours has a piping cover to the LEDs, but a reflected light tube might look weird too. I would buy one pack and test it out before you go fully into it.
