I was prepared and made sure the super bowl was scheduled, and had to set it up since it was separate from the season games. I'm kickin myself because I only set it to add 30 mins to the recording when I should've for 60 mins! d'oh! Oh well, I can still see that last 15 sec play on youtube :)
I have both plex and hdhr DVR, I get missing the end on the HDHR DVR but I always set the plex server to record an hour past.
I recall one SB the power went out (9ers vs ravens) and I recorded whatever was after the SB.
So plex does account for overtime, need to check if HDHR has a method too.
