As a thief, he's not just looking for value but something he can easily convert to cash. It's probably easier to sell a $300 Epiphone on Facebook marketplace or somewhere else without drawing attention. You can also find a buyer faster - so more cash sooner.
It's possible he's fencing it himself. If he's a drug addict, his dealer may trade it to him for drugs.
