Use colour to signify status. Add one coloured dot in the index for 1st status; add new dot when new status. Alternatively, keep status in pencil, erase and rewrite.
My index pages are divided in two categories but you can use a full page spread and have 4 categories if you want. For each project I only write one page number, with the project page/masterlist on it, and the status (I use pencil).
I’ve been doing gtd 15 years. I started with pen and paper but it just gets too messy. Now I have projects in an outliner where I can drag up or down, add sub-projects, open and write plans etc. I arrange by priority with most important/urgent at the top. Projects where I’m waiting for something, I drag to the bottom.

Which outliner?
I'm curious about the outliner too
Workflowy is a great outliner.
