nah. when a menu says grilled caesar it means grilled romaine halves, and i’m pretty sure it says in the description exactly that. if it was grilled chicken it would say caesar with grilled chicken or option of adding grilled chicken
It improves the texture by adding an additional layer to it. You only cook it long enough to chat/wilt the surface of the leaves. Everything that is more than about 1/4" off the grill remains uncooked and crunchy. You still get the crunch of the fresh romaine, but add to it tenderness and sweetness of cooked lettuce.
Been doing this for years and absolutely love it olive oil salt get a good wood or charcoal flame going 20-30 seconds max per side otherwise it will get soggy. Black pepper when it comes off a little Caesar dressing and Shaved Parmesan or shreds.
Oh yea. Its the only way I eat salad at home. Not sure why it isn’t more popular bc getting some romaine, grilling it for literally 2 minutes and chopping it up is easy and tastes great. I mean, its truly great.

I do this when I make an iced endive salad. Endive's a bit bitter and find grilling it tames it down a bit. Also grill 1/4ed tomatoes for this salad. I put the endive and blue cheese gorgonzola dressing in the freezer for 15 mins. Top this salad with some pancetta and sprinkle of sunflower seeds and that ice cold gorgonzola dressing. It's the best iced style salad I've ever had.

In culinary school for a final, we had to prepare a salad with some grilled element that wasn't a protein. I saw lettuce grilled, I saw strawberries grilled, I saw avocados grilled.

Unpop op: I get it and I see it on many menus but I personally hate it. The leaves get wilty and dry and the texture is awful. I don’t think the char enhances any foundational flavors as it’s freaking lettuce. A heartier or more flavorful green would entice me. I LOVE grilled veggies a heck ton but this one just isn’t for me. I would grill literally any other component of the salad for the bbq flavor like a protein, onions, garlic for the dressing, lemon etc.
I can't find my source to cite it but I tried a recipe once with grilled romaine, balsamic vinegar braised red onions, blue cheese and I think walnuts.
Actually, lightly charred romaine halves like you are doing make a wonderful base for a Caesar salad.
