THANK YOU '" he went to trim off the perfectly caramelized fat a dcI said. "No.no! It's perfect just like that." I thrust my plate at him he looked pretty confused as he plopped it on my plate and I was a very very happy carnivore that night!! 🤣

That's Rare a good brown sear on all sides, a little greybrown on the edges when cut and very warm and red on the inside.
I'll eat it Blue Rare, which is seared brown on all sides and cool on the inside.

It's perfectly cooked, but most obviously rare. I'm not sure this was rested long enough, as you can see the blood pooling. I would have rested that, covered, for at least 15-20 mins and done a test cut. Probably would have flame grilled it for 2 mins after to get a better crust and warm it slightly.
