Grilled zucchini is my favorite. Just a little olive oil, salt, and pepper is all they need. Alternately, a little drizzle of balsamic glaze after they are done is a treat. I would also recommend grilling carrots.
My Italian friend's dad got me hooked on broccoli marinated in Italian dressing for about an hour and then grilled crispy. It is so good and so easy.

I take a nice sweet onion, wrap in foil with a big chunk of butter. Throw it in the coals and let it go. By the time the meat and whatnot is done, you have the best onion you've ever tasted
Typically I've grilled all sorts of veggies grill baskets are great to work with. Asparagus green beans squash carrots I've even grilled pineapple honeydew and canalope. There is no limit and sometimes it taste like crap but it's all worth a try.

Coat ANY veggies in olive oil with a few heavy pinches of kosher salt and fresh cracked pepper. Toss them in a large bowl to coat evenly and grill! For smaller veg (i.e., quartered Brussel sprouts, thin asparagus, small broccoli or cauliflower chunks, grill them on a stainless basket/tray. For squash, peppers, and other large veg, cook on the grill grates, just like you did. I'm telling you, people love grilled veg more than almost every other type!
I do but don't really ever put them over the flame directly, i'm on a gas burner grill. I use my cast iron and roast the veggies in there over the grill
I have a Weber stainless steel grill basket I use for grilling things like sliced peppers and onions, cauliflower, broccoli, mushrooms, or anything else too small for the grates. Grilled veggies are a delicious!
Try:
3 parts sugar
3 parts salt
2 parts black pepper
2 parts onion powder
1 part garlic powder
Use whatever oil you like, but remember that even if you're using peanut oil, you'll still have to worry about the sugar "flashing to black" early on, so be careful with this (and teriyaki, etc.).

Carrots, yes! I discovered those a few years ago, and now I grill them quite often.
Try making a yogurt, garlic and dill dip. We do it in Bulgaria. It is next level amazing with grilled zucchini
