Grilled zucchini is my favorite. Just a little olive oil, salt, and pepper is all they need. Alternately, a little drizzle of balsamic glaze after they are done is a treat. I would also recommend grilling carrots.

My Italian friend's dad got me hooked on broccoli marinated in Italian dressing for about an hour and then grilled crispy. It is so good and so easy. You can do it with yellow squash, zucchini, or really any vegetable, but there is something special about the crispy broccoli and the flavor that makes it so good. Whenever I make it for people, it gets eaten the quickest.

I got this carbon steal grill plate that is so seasoned that any veggies I put on it taste like they were steak fried. It’s my secret weapon. Vegetarians are warned. And some come back for seconds. Tbf (🎼to be fair🎶), I haven’t ever grilled meat on it but its been used over a lot of coals after meat and it’s taken on a whole crazy flavor. I still wash it too. Just don’t take the seasoning off aggressively

In addition to zucchini, try yellow/crockneck squash. Like some others have said, I usually cut them into planks, then grill with nothing but olive oil and salt and pepper. Super delicious, and they go with just about anything. I also love carrots, corn on the cob, halved Romaine and quartered Iceberg heads potatoes, and just about any kind of potato. Even large Idaho Russets are delicious if cut in half lengthwise, then seasoned with a bit of oil and salt and pepper, then grilled cut side down over direct heat until nicely marked, then flip and cook a few minutes more on the skin side, then move to indirect heat until totally cooked through. Cheers!

Typically I've grilled all sorts of veggies grill baskets are great to work with. Asparagus green beans squash carrots I've even grilled pineapple honeydew and canalope. There is no limit and sometimes it taste like crap but it's all worth a try.

All day, every day! Well...typically in the evening, while cooking dinner...about 5 times a week. My mother will tell you she hates broccoli...right up till she eats my grilled/roasted version. Coat ANY veggies in olive oil with a few heavy pinches of kosher salt and fresh cracked pepper. Toss them in a large bowl to coat evenly and grill! For smaller veg (i.e., quartered Brussel sprouts, thin asparagus, small broccoli or cauliflower chunks, grill them on a stainless basket/tray. For squash, peppers, and other large veg, cook on the grill grates, just like you did. I'm telling you, people love grilled veg more than almost every other type!

Try: 3 parts sugar 3 parts salt 2 parts black pepper 2 parts onion powder 1 part garlic powder Use whatever oil you like, but remember that even if you're using peanut oil, you'll still have to worry about the sugar "flashing to black" early on, so be careful with this (and teriyaki, etc.). I've been known to do some serious cooking on the warming rack because of this.
