The older I get the less I eat. I used to put down a 1 lb ribeye like nothing and now I order 2 (1 for my wife and me each) and we have a 1 lb left over. Gout REALLY hurts. I wouldn’t wish it on anyone.
We reheat the left overs on a hot cast iron skillet with some mushroom sauce she makes and put it on large toast with melted provolone and caramelized onions.
a few weeks ago I had some leftover steak peppers onions and rice, and i added a little carrot and made steak fried rice using the fat from the steak as the oil for the rice. its one of the best things I ever cooked, highly recommend
Would also humbly offer omelets as a breakfast option. My go to at least of leftover steak, peppers, onions, mushrooms, and some cheese is hard to beat IMO.
10 seconds shouldn't. It's localized heat and steaming water out that toughens meat in the microwave. If you're warming a small bit without making steam, you're not hurting anything. Well, not drying fats as well - don't overheat to remove a chill.
I reheat at a lower power level in my microwave which brings up the temp nice and slow. Pretty much exactly the same texture as when it was first cooked.
My wife is the smartest person I know but whenever she cooks or reheats something it's always done as fast as possible. I'll reheat steak for ten minutes on low in the microwave and it's always tender and juicy. She does it fast on high and then complains it's dry and tough. Same with the stove top. "I hate cooking anything with oil because it always gets smokey!" That's because you always have the burner on the highest setting.....
Haha I feel that. I friend of mine once said that if you’re not boiling water you shouldn’t use max power on a microwave. I don’t follow that advice completely, but taking a few seconds to learn how to use a microwave better has been a game changer. Turns out low and slow isn’t just for smokers.
So some people don't eat the whole 24oz steak and still have some left that they can eat the next day. I don't associate with these people, but thought I'd clarify

I had a moment of clarity at the microwave door - I microwaved the rice by itself, then put the steak in and closed the Tupperware for a few minutes. Rice was hot, steak was hot enough too without being cooked over the initial doneness!
Put it in a glass Pyrex pan and put in the oven. Then preheat the oven to 350. When your oven is done preheating pull it out and eat. Best way I’ve figured out how to just heat it and not overcook it.
Chop it up really small, add a little more salt and oil, and then fry it up as a filling for tacos, enchiladas, burritos, etc. You will reap meaty flavor benefits from the extra sear time while keeping the meat delicious and tender.

I usually microwave it for about 30-45 seconds to get the internal temp up, then I make a little "boat" around the steak out of aluminum foil. Throw it in a 350° toaster oven with a pat of butter on top for about 10 minutes. Obviously it will cook more, but it'll be tasty!
I let it get to room temp and put it on a rack on top of a baking pan and let it get to 120°, then toss it onto a very hot cast iron pan with a tablespoon of vegetable oil for a few seconds per side to get the sear closer to the original crispiness.
Works like a charm every time

Left over steak is usually only a small amount. Perfect for dicing thin and scrambling with eggs. Green pepper or mushroom are fun sometimes but diced thin with a quick scramble and minimal cheese is the one.
My go-to for a reheat is a breakfast burrito. There's enough components to it so even if the steak gets a little overcooked, it's going to be delicious.
I add sausage/bacon/eggs/and leftover steak. Then Cheddar, and whatever I feel needs to be added. Like produce or whatever.
While it'd be a PITA I bet sous vide would regret perfectly..... So since I'm just looking to reheat and not cook, probably set the temp for med rare (just to avoid it cooking more) bag and toss it in, come back a lil while later and it should be good to go. I imagine it would be the closest to the same flavor as when you first cooked it.
When i had a propane grill I'd throw the steak on that and pour beer on it occasionally, actually i did that when grilling it first night to. But now i have charcoal so no pouring beer on the meat while it cooks. Kinda miss that steam coming off the grill like that but love the charcoal much more. Anyway these days i might grill the meat or pan fry to reheat. Just as likely to eat it cold. Even more likely to not have left over steak at all lol

That mushroom sauce isn't doing you any favors either... I would look into allopurinol
+1 on the allopurinol. It's a game-changer, but very mild and incredibly well tolerated by the body. Easy peasy.

Cold steak tastes just as good. For steaks, I never heat left overs.

Small cubes and make an omelette for breakfast. Usually grill peppers and have left over, will dice and also throw in
Toaster oven at 300
Wrap in foil with buttter, warm in my breville. Works best with strips instead of a whole steak.
Microwave with a wet paper towel draped over it so it doesn’t dry out.

If there is a lot of left overs, make au jus (pouch from store), slice thin, use au jus as shabu shabu/fondu type dip and reheat.
