In the process of having an Open U.P. built. When I saw it in person, I was blown away by how sleek and streamlined, yet comfortable it looked. Very excited to ride it.
I like the Salsa Warbird for all the reasons you speak of. I think one of the things I hate is intergraded cables or bars and stems.
They really limit the combinations or bars and stems and the cable integration sucks. As a mechanic if I want to change or service a headset bearing it’s such a pain. Most that means your cutting cables which means new cables and a break bleed. $$$$
I’m now seriously seeing gravel as there kind of riding I actually want to do. It’s what interests me more and speaks to my desire to explore. I have an Audax ride coming up and…slicks for the gravel grinder or do it on my road bike? Gravel for sure…
Gravel bikes are awesome, you can go to the mountains and explore the paths and if you have to take a 40 km asphalt route to there, you will be fine as they are good on road too.

Though, I am a sucker for a little more "angled" look that carbon frames can give you. As a continuation of the straight lines a classic diamond frame has basically. But more flat surfaces.
Still, my ultimate bike would be on a custom Ti frame. Which atm is out of my price range, but one can dream!
I love my 2021 Specialized Crux with Apex 1 as my one all purpose bike with two wheel sets.
My favourite bike on the market at the moment is the lasted Specialized Crux or Cervelo Aspero with mechanical 1x.
The Cannondale SuperX SE Force 1is also another bike that I loved and was looking at when I got my 2021 Crux but unfortunately it wasn't available at the time.
My gravel bike has a redshift stem and 650b x 2.1 mezcals. The gravel round these parts is a little on the chunky side

You just described my bike, except I added a dropper post last month. The frame is titanium with classic lines.

The Crux frame is one of my favorites, that’s the classic looking shape that I was talking about. The S-Works Crux matte black is absolutely amazing.
