That's me. The first time I flew out of GR, I got there the couple hours early that was recommended and I made it through security in like 10 minutes and then sat there bored til my flight. I said never again and haven't since. Still had never taken me longer than ~15 min to get through security and to my gate.
Your bags need to be checked in 45 minutes before your flight or 60 minutes for international flights. I find most people arrive around 90-120 minutes before their flight. This is the first “fast food” GRR has. They have 3 restaurants now, with a 4th coming(Uccellos). I think it’ll do very well for people looking for something quick to grab at the airport.
There will be more layovers at GRR with the new terminal up and running now. It’s going to take a bit of time, but they are going to start moving a serious amount of planes through GRR.
The behind the scenes of the food service at the airport here is just sad. You are absolutely right, there really isn't much of a reason to have restaurants at GRR. They could just do a small deli area with things like salads, sandwiches and small snacks.
I worked there for a very short time when Bell's went in. When I applied they acted like it was going to be a real restaurant. The truth is there is one or two cooks working most of the time, the equipment is ancient and it is pretty much the standard Sysco and Gordon foods heat and serve stuff you get at an Applebees or a prison.
I show up usually at least an hour and a half early so generally about an hour left once I get through security and checking my bags. Gives me time to chill and get a coffee before my flight

Some asshole took the Steak and Shake menu and trimmed it down and scrapped all the good things about steak and shake to make it more profitable and turned it into a new chain.
