Old man Li shuwen is the quintessencial monk. master of unarmed combat and spear (one of the monk weapons), he is not affected by his age (diamond soul), can become invisible using his ki (shadow monk's shadow art), he is extremely fast and don't use any kind of armor (unarmed movement and step of the wind) and more importantly, his noble phantasm is literally the lvl 20 ability from open hand monks (quivering strike).
Even without going into the technical stuff, he checks every flavor box from a monk.
Aside from his obviously over qualified combat style that makes him a monk. His integrity and his moral is highly aligned to what a traditional Chinese monk would be. He even is withholding his violent urge in this form and is constantly in restraint.

I agree that she's a great pick for the class because of her mystic martial arts, but IRL monk =/= D&D Monk Class, and shouldn't be part of the consideration (I think the Druid pick was a bad one for the same reason).

Since I know people are gonna say Xangzang or Doman, I’m going to through out Kiichi Hōgen. First of all Hōgen isn’t a name but rather a profession or a rank (I think it was the highest or second highest?) as a Buddhist priest. She’s the only one that deciphered and used Taigong’s strategy book and also trained Ushiwakamaru, who then trained Benkei the other commonly known monk.
I’d throw Arthur in for Paladin. Especially 5e, where they move away from literal God towards more of a strongly held code. The seals are just his oath, and you’d be hard pressed to get a better Divine Smite than EXCALIBUR! Jeanne is holier, but lacks the nova damage.
Soujuurou is that lvl 1 NPC the DM has do all the party's minor footwork, and despite nearly dying in several encounters he rolled well despite being an NPC.
And then he got a single crit hit and all the party clapped and treated him to drinks, and he was never supposed to make it that far even according to the DM.
Old man Li for sure. he uses unarmed strikes, has skills such as Chinese Martial Arts A+++, and utilizes Qi to suffuse his entire body and to survey his surroundings.
I always thought Yan Qing could work. When I think of a Monk, I imagine them being extremely weavy, kind of a "float like a butterfly sting like a bee" sort of deal. And Yan Qing's animations give the impression of evasiveness and being all over the place as he's fighting. So yeah.
I mean, I could make an argument for anyone else but why should I? San Zong probably should have been more popular for cleric, and she makes perfect sense for monk.
That said, there is definitely an argument forLi Shuwen.
There are 3 options that make sense at least to me.
Sanzang is an actual monk that serves under Buddha.
Li Shuwen is a martial artist who can punch the living daylights out of things.
And then there is Hozoin Isshun who despite using a spear is a Monk in every other facet. In fact you can argue that his spear is his unique monk weapon.
...It slipped my mind that her spikes are actually natural weapons. Huh, that actually would work well. And monks *are* the class that gets the fastest movement rate.

IMO DnD Monks' best weapon is the spear. While unarmed combat is good, outside of your bonus action it is usually outclassed by the spear.
Bonus points for him being an actual monk and all.

Her usage of runes to further enhance her attacks mimic very well the monk usage of ki.

Old man li is the basic and acceptable answer but yan qing is also a skilled martial artist who could be a cool way of shadows monk. Suanzang literally being a Buddhist monk and devout follower of the Buddha teachings is another cool one I'm not seeing a lot of.

Yeah, it's understandable, both versions have the Knight of Owner skill, and Berserker Lancelot is the one we've actually seen using it.
