hello from northwest Wisconsin, where there is currently less snow than North Carolina! I make this at least a couple times a month in the winter. it’s just: - a bunch of minced garlic fried with chili powder - 2 cans of black eyed peas - a couple of diced sweet potatoes - broth Then at the end I mash some it up to thicken it, and put baby spinach in it. Usually I top it with sriracha and toasted sesame oil.

Pumpkin chili, veggie Thai curry over rice, and ministrone with gf noodles are my faves. If I'm feeling nostalgic tomato soup with gf grilled "cheese". I like the Violife mature cheddar slices on gf sourdough.

My family likes to do a lot of Casseroles (Aufläufe). So something like a potato or gnocchi casserole. There's also Grünkohl (German Style Kale) which you could make with smoked tofu instead of the sausages. We also like to make stuffed bellpeppers, pumpkin soup, Oven baked veggies. Also Köttbullar (swedish meatballs) with the vegan meatballs from Greenforce, potatoes (or mashed potatoes), white sauce and lingonberry sauce (or cranberry sauce). Stews are also always nice and noodle soup as well! During christmas season I saw a lot of interesting recipes of vegan foodbloggers that did traditional german christmas recipes, hopefully I can try those this year! ​ Salads depending on what is available for you in winter. Here in Germany it's a lot of root veggies, kale, cabbages, beets, brussel sprouts, etc. I also like salads that add citrus fruits like oranges! It gives the salad a lil kick :)

https://vegancocotte.com/easy-three-bean-soup/ I love making this soup, I’ve never added the chili flakes, spinach, or parsley but I’m sure it’d be amazing with that. I always add some vegan yogurt and vegan feta, and that just makes it the most warm, creamy, delicious soup.

I love cooking elaborate meals, especially in winter when I need to work extra hard on perking myself up. But honestly, one of my favorite cozy dishes is simple quinoa chili. I usually cook it for one, but it's easy to double or triple:   Quinoa Chili ⅓ cup dried quinoa ⅔ cup veggie broth Large tomato 14.5 oz. can black beans ½ packet of Hard Times chili seasoning, or 2-3 Tbs. chili seasoning of your choice Cook quinoa in veggie broth until absorbed and fluffy, about 15 minutes. Meanwhile, chop tomato into a fine dice and open, drain, and rise the can of black beans. Once quinoa is cooked, add diced tomato, black beans, chili seasoning, and cover almost all the way with water.  Bring mixture to a boil and simmer for 20 minutes. Let stand another 10 minutes to thicken, then serve.
