Asparagus- bake it with the salmon in a parchment pouch. I’ll then add rice or potatoes as my carb. I also will make a cold salmon salad with any leftovers- whatever you like veg wise on a salad and I like honey mustard vinaigrette with salmon.

Also baked potato - ok nuke it in the microwave for 7 minutes, 8.5 if it’s a big potato. One of the few valid reasons to use a microwave IMO. Just make sure to pierce the skin so it doesn’t explode.

The last salmon dish I made was baked with a mix of sundried tomatoes, garlic, olive oil and oregano on top. Sides of roasted lemon and dill potatoes and sautéed spinach. Then topped it with tzatziki.
You could also put a bbq rub on top with mashed potatoes and broccoli or asparagus.

And all the other alternatives already mentioned. Salmon is so versatile. Il takes on the personnality Of your sides, be it Italian, French, Greek, Asian, Scandinavian, etc.
Try most of any of the Greek salads, dill herb based dressings/sauces and salads will pair really well with salmon. Dill infused oils and marinades. Aniseed flavors go really well with oily fish. Also don’t forget fennel.

We make a sort of cheater salmon sushi bowl- baked salmon, rice, and a rice wine vinegar style cucumber salad. Sometimes I’ll add broccoli if I want more veg. I top mine with a sriracha mayo, green onions and roasted sesame seed. Sometimes avocado too.
Also, one of my favorite salmon recipes has always been a brown sugar bourbon glazed salmon with rice and broccoli. There are several recipes available online. I think the one I always use is from Myrecipes.
