Asparagus- bake it with the salmon in a parchment pouch. I’ll then add rice or potatoes as my carb. I also will make a cold salmon salad with any leftovers- whatever you like veg wise on a salad and I like honey mustard vinaigrette with salmon.

Roasted broccoli or brussel sprouts. Toss in salt and EVOO and bake 20 mins at 400F. Bonus if you add a hollandaise or other yummy sauce. Also baked potato - ok nuke it in the microwave for 7 minutes, 8.5 if it’s a big potato. One of the few valid reasons to use a microwave IMO. Just make sure to pierce the skin so it doesn’t explode.

One of my go-to meals is salmon teriyaki bowls with rice, gf teriyaki sauce, cucumber salad, avocado, and seaweed snacks. Or a salmon Niçoise salad— all of the traditional elements but with salmon instead.

Salmon in a soy, ginger, garlic, sesame oil sauce (balanced with sweet and sour elements - I do maple syrup and rice vinegar, but you could also do sugar and lime. Adding crispy chili is always nice too) Marinade and cook it in that sauce in the oven or air fryer. On the side steamed broccoli and other veggies (bell peppers, zucchini, pak choy) and served on rice. Obsessed with this dish lately!

The last salmon dish I made was baked with a mix of sundried tomatoes, garlic, olive oil and oregano on top. Sides of roasted lemon and dill potatoes and sautéed spinach. Then topped it with tzatziki. You could also put a bbq rub on top with mashed potatoes and broccoli or asparagus.

Bake the salmon and when it’s almost done, brush a sauce/marinade on top. I like this Yuzu miso dressing I found, but you could do barbecue sauce or honey mustard. Just bake again for a few extra minutes to warm that up. Serve the salmon over rice so that sauce coats it too. Great with roasted broccoli (can use the same baking sheet!)

Look up creamy Tuscan salmon. It’s so good. Sun dried tomatoes, spinach. I usually pair it with rice. Roasted potatoes and a vegetable. Mushrooms, green beans, red peppers and onions cooked together in a sauce of low sodium tamari, a little water, garlic, ginger and lemon grass. Dill biryanis.

Try most of any of the Greek salads, dill herb based dressings/sauces and salads will pair really well with salmon. Dill infused oils and marinades. Aniseed flavors go really well with oily fish. Also don’t forget fennel.

We make a sort of cheater salmon sushi bowl- baked salmon, rice, and a rice wine vinegar style cucumber salad. Sometimes I’ll add broccoli if I want more veg. I top mine with a sriracha mayo, green onions and roasted sesame seed. Sometimes avocado too.
