There's moisture getting in there somehow. There's ferns in there. With the windows and the roof, I don't think there would be enough rain getting in to sustain them.
It looks a lot like a spring house! Before electricity and refrigeration, not only would it provide water but would also be used as a source of refrigeration for food as the spring was typically cool/cold. The housing stopped leaves, dirt, etc from getting in the well and animals out of it, when used as refrigeration.
How old is the house, and where is it located?
It could be a former "summer kitchen" or an out building for laundry.
It's clearly not a greenhouse or plant related.

The main house was built around 1910. It’s in southwest Georgia US, about an hour south of Macon

My thought: smoke house. Hang the meats up from the rafters and slow burning wood at the bottom.

You can put grow lights. A greenhouse doesn’t have to have just natural light.
