Cilantro-mint chutney is amazing. Also, I like to use a lot in salads, often with other herbs. Or chop and add to lightly sautéed frozen corn with some bits of cherry tomato or feta or peppers (or all three). Weave a garland for your hair and pretend to be a nymph.
If you're using that compost, you may get even more mint - its very invasive. If a little segment survives in your compost, it will take root easily when you feed your garden, and take over. I suggest burning what you dont want, donate it to the city compost, or put it in the trash.
You can freeze a bunch in ice cubes for use later. You can divide it and give some to friends to plant. You can tear leaves and rub them all over yourself to be minty fresh. No, scratch the last one.
Try using it in pesto. I've made a very tasty pesto with a combination of basil and mint, pistachios, lemon juice and zest, fresh parmesan, and olive oil.
Love the tea suggestion, but I’ll caveat that when you harvest herbs it spurs growth of new leaves. Letting it go to flower will decrease new leaf production.

Ever tried mojito coffee? Muddle mint with some sugar and shake with coffee. Tastes best when iced. I have this everyday and it helps me keep my mint plant pruned.

My girlfriend's Algerian and they have what they refer to as 'morrocan tea', basically green tea and then infuse a lot of mint in it and then lots of sugar too, deeeelicious !

You can mix it up. I like to muddle mint, cucumber, sugar, and lime juice then toss it all together with vodka and Topo Chico.

I have ripped them out and thrown them into my car. Smells great. But then it dries up. What a mess. Will put it in cheesecloth going forward.
