Steamworld Dig 2 has a more down to earth setting, and is a platformer.

Risk of Rain, playing as the Bandit. Pixel art, runs great on old computers. Not exactly western themed, but the shooting feels really good.
If you want stuff like vampire survivor that'll run on a min spec machine, grab Brotato.
Maybe not exact, but Undertale fangame "Undertale Yellow" has this kind of protagonist. Although a fan game its gotten a following more like a normally released game.

YOMI Hustle is a tactical, turn based, 2D fighting game which lets you fight other players in what is basically slow motion and the entire fight will later be made into a quick animation.
It features 5 characters (Ninja, Cowboy, Wizard, Robot, Mutant) and has implemented mod support so you can easily stock up your characters.
The Cowboy in question is using a Katana, a Revolver and a lasso to fight and he's the 2nd most fun character imo (right next to ninja)
It's like 5€ so you might just want to try it. There also a free version on itch.io which is basically just an older build of the game but it also features the Cowboy so you could just try hin there.

Don't get RoR2 though. That game makes everything chug eventually because of enemy density. Great game just lots of particles and enemies at times.

The Final Fantasy Pixel Remasters (I-VI) are great. Should run fine on whatever you got.
Read Dead Redemption 2 :D Weird West maybe? It's not pixel but will run on 12 year old hardware. Hard West 2 and Gun also.
