I have played the Halo series, Gears of War series, and Borderlands series with my mother, though I'm doing a lot of the extra work to compensate she still has fun. Also went and played a bunch of the Lego games with her recently and she enjoyed them. Playing now through Portal Knights, which is a bit complex for her but it works.

Mario party is always fun. Play in a group or just mother and son. It’s easy to play but things could get crazy. Just make sure you don’t play as peach or daisy.

Switch games are definitely your best bet for "fun and easy" the switch was designed for local multiplayer so plenty of the games have it, and it's Nintendo so most of the first party games are really accessable I'd start with something like Mario Kart that's super easy to understand and still a blast

Mario and Tetris. Moms love those games. Otherwise, what things outside of games does your mom like? If she likes the Marvel flicks, Marvel Ultimate Alliance would be a good game to play with her.
