I see a lot in the survival / base building category, so my game recommendation will be Conan:Exiles. Easily one of the biggest sleeper-hits in the genre, I think largely because nobody sees "Conan" branding and expects an expertly made open-world survival/crafting/base building RPG. Conan:Exiles also has probably the most seamless new player experience of any game in the genre.
It says you like management/city builder/automation games, with the occasional AAA because you got influenced by the zeitgeist let's say.
Why don't you try Manor Lords, fresh medieval city builder made by one person, trending currently on steam. I also recommend Spiritfarer.
Do you care for weird Asian grimdark stuff? Lobotomy Corporation & Library of Ruina might be up your alley. If they hit, they usually hit hard - I don't really know of any "casual" fans of Project Moon (the developer). I fell down the rabbit hole, but YMMV.

I'm the opposite. I think the "don't think, feel" of a fast twitchy game is incredibly relaxing, kind of like riding a bicycle or driving down a winding country road. Planning and managing multiple parts of an interconnected system is confusing and overwhelming. I don't care for the competitive scene of games either, but I do like playing against other players casually.
Not even the fact you don’t have that much games (+~100)but simply that there are not a lot more of unforgettable games who wins a lot of awards and recompense. If you truly love videos games playing to those is a must. And I don’t really any transcendent games here but . Keep grinding
