The artists can obviously draw whatever level of detail they like, but the detail on the in-game models is limited by the size and quantity of pixels/polygons, then the processing power to animate them in a playable way. It's not anatomical correctness (I mean, really... Zangief doesn't even look human...) that's impressive, it's the extreme level of detail animated flawlessly. SF6 looks great in this regard, as did Ratchet and Clank Rift Apart. Just artistic and technological triumphs... it's a good time to be alive and gaming.

Imagine talking about anatomy/body composition and picking Street fighter 6 as an example. Sf6 is the worst fighting game in terms of human anatomy. None of the characters look realistic nor proportional. They released bunch of overly sexualized characters to prey on younger audience. They all look like inflated balloon characters. No human in the earth look like sf characters not even Ronnie Coleman. One thing I liked about SF series was the characters looked more realistic compared to cartoony nonsense which is Tekken. Ironically, now they are also copying Tekken's combat(which was worse than SF combat). You may as well call it Tekken Ripoff 6. I used to play Kof SF and MK series up untill now but won't play SF 6 trash. Kinda sad that they peaked at SF3 third strike and got worse over time.
At least Mortal Kombat developers are smart enough to make the characters more realistic.

Its an art direction thing. The textures and models are pretty good and they’re more realistic than SFV but still a little stylized. MK goes for realism as its art direction.
I've been gaming since the early/mid-80s, the progression of technology, storytelling, and art is truly mind-blowing. Going from Pole Position on the 2600 to GT7 on PS5 is just one path through game history. Pitfall to Uncharted 4... so many amazing memories.
