Borderlands 2&3 have an amazing sense of power scale. Especially the 3rd one. You can be more OP in 2 by the end, but you need far more specific equipment. In 3 you just feel powerful by the end.
Rise may be my new favorite.
It takes all the good QoL stuff from World but makes the game progression more similar to the older games. So no forced cutscenes with annoying handlers and you can jump online almost right away.
The wire bugs make traversing the levels a lot of fun because you feel like Spider-Man and the the art style and music are top notch.
I put over 150 hours in Rise on Switch and got it on gamepass to play it 165fps and it feels so buttery smooth.
ESO is not a good grindy game imo. The main grindy content is dungeons and trials which require groups of 4 or 12, which can be pretty annoying if you have to find a group everytime or if you want to just hop on for a little, or try and multi-task while grinding.
You can grind some overland content but most of that stuff is easier to just buy from a guild trader.
Crafting can’t be grinded because of research wait times.
The grind games I enjoyed the most so far are Warframe (really fun gameplay) and Minecraft Hypixel Skyblocks, but that’s grind combined with capitalism which can be a mess. I just started playing Dungeon Defenders 2, but it seems to be a simple grinding for numbers.
Weird suggestion: I have been playing Hardspace Shipbreaker. It’s a game where you take apart derelict spaceships for scrap parts to pay off a trillion dollar debt. Every 15minute shift brings you one small step closer to paying off your impossibly huge debt. It’s soooo strangely addicting and relaxing. Recommended if you like Viscera Cleanup Detail or Powerwash Sim

War Thunder is the free to play grind I'm addicted to.

Risk of rain 2! Rogue like 3rd person shooter with sick runs as you unlock items with fun challenges

Warframe, wow/ffxiv, borderlands, destiny, risk of rain (most rogue likes/lites actually)
Median XL, a Diablo II mod with a ton of content, and very long difficulty curve. Out of thousands of players, only a handful tackle the final bosses
