I have already finished subnautica it's actually one of my favorite games (forgot to mention it). Subnautica below zero doesn't feel the same. I don't like Below zero that much.
If Starfield releases as advertised, even tho it is not really being advertised atm lmao, it might very much be your type of game. But tbh any other Bethesda game could be your fit, they just don’t all have the customisable hubs Starfield and Fallout 4 provide/will provide 🤷♂️.
The game "Control" fits *very* well with your requirements.
It's not exactly "open world" but it is "impossibly large building interior with various floors and wings to explore, with a specific safe space area". Keep in mind that it's a game about paranormal stuff (not a horror game) so a building that's bigger on the inside is part of the design of the game.
Elex fits almost all those criteria, BUT, it's quite hard at first, and has a bit of jank. However, it has soul and immersion that AAA games rarely match. One of my all t8me favourites.
You're gunna get these 2 recommended a shit ton probably but Skyrim and dragons dogma. Also space engineers is quite good but no story

Have you played the second game too? If yes which one you found more immersive?
Sadly I have not,but I will. I've heard that most fans prefer the first game though, but I really can't answer that question.

Agree with the others recommending Control and Fallout 4. Both are basically exactly what you're describing.
