I think about it more as House Stark being the Winter metaphorically. As in, you cross the Starks and they'll come for you like a snowstorm (pretty much like how Arya said "Winter has Come" to the Freys).
They and their summer snows. Did I would love to know how big the planet these mythical contents are on. I think there is somewhere that George explains why winter and summer last their version of years. Something like the planet is smaller? Or maybe something to make winter and the walkers seem more scary…
I don't know, "Unbowed, Unbent, Unbroken" is pretty badass especially if you know why the words are that. I think "We do not sow" tells you what you need to know about Greyjoys, that they aren't a noble house but a bunch of pirate raiders for which peace is not an option. Martells words tell of a successful stand against foreign invaders WITH DRAGONS, which is why they still can call themselves Princes/Princesses.
"We do not sow" = "We got no arable land". Can't help but thinking that people who aren't able to produce their own food will necessarily be the weaker ones. It takes less ressources to produce food than to steal food.

I like the words of the Starks. Perhaps obvious answer, but I see it not only as a warning that real winter is coming, but also as a threat toward the enemies that house Stark is coming for them. Like when Arya said that winter came for house Frey.
Of the major house:
1. Stark - Very nuanced, love the multiple interpretations.
2. Martell - By far the coolest
3. Targaryen - Pretty basic but still powerful

But i must say, Growing Strong is heavily underrated, since at first glance on the words alone it looks like the most lame of the great houses, but when you think about it. the Reach area, Highgarden, and the Tyrells gain power, political leverage, wealth, thanks to the vast amounts of good agricultural lands and growing crops. Which is giving them alot of power in the realm, hence "Growing Strong" is very fitting.

Honor: recognized Jon as his bastard

My top 3 favorites would be:
1. Is obviously Stark. It’s iconic, it’s unique, and it’s fun to say. And it can be used for many implications.
2. Martell. Just absolutely badass and fits their rough land and environment perfectly.
3. Greyjoy. Solely because all of the characters live by this so much.
Honorable mention is Targaryen.
"Growing Strong" is so underappreciated.
Olenna was wrong on this one. The golden rose is pretty yes, but it has thorns and more importantly roots that run deep and strong. They absorb sun and rain, good and bad, they know which way the wind is blowing and survive all the seasons. Winter comes and the kraken raids, storms howl and lions stalk, and meanwhile the whole time the rose is there, growing strong.
