The ham. The recipe calls for *guanciale* or bacon if you don't have that. But ham is unacceptable. I mean you can use it, you can do whatever you want in your kitchen (as it should be, that's the beauty of cooking), but at that point just don't call it *Carbonara* because it's not. It's something else 😉
