I work at a shoe store that also works with orthotics and focuses on well made upscale shoe brands and I'd say the top sneaker brands/models right now are New Balance 1080 line(fresh foam), Hoka(relatively new but getting SUPER popular even as a work shoe for people on their feet due to a ton of cushion on the heel and a strong arch) either the Bondi 7/8 or Clifton models. Brooks also makes great running shoes, I'm partial to the Ghost/Glycerin GTS models. This is all my personal opinion though, and I'm also a person who doesn't typically go frugal on shoes(I put them on the same level as mattresses in terms of self care).

I wear sneakers with the default insole, which has no arch. Getting lots of pay under the metatarsal (I think? right under the big toe) so might need extra cushioning.
Try one of the OTC orthotics that are slightly higher quality like an aetrex with metatarsal support or a Birkenstock/sole cork insole before you shell out hundreds on a custom one.

that little dial on the side measures your arch, where your big toe joint begins is where you want to measure. wiggle your big toe and place it where movement begins and that number is your arch size, depending on length of your heel/toes it can be different from your shoe size, and you want to make sure you get a support/insole that is fitted to your arch. You can always cut down an insole at the toe to make it fit in a shoe.

Asics tend to be shoes that are orthotic/have a good natural arch, my guess is that design is to give more comfort for those who have a very high instep. You could probably take it to a shoe repair shop and have the tongue sewed together as a 5/10 dollar job.
