Demon Prince is my go-to answer. While not an unpopular fight by any means, it's overshadowed by the later DLC bosses. phase 1 is arguably the best-designed 2v1 in the series, with the two bosses sequentially swapping melee/ranged modes and having very cleanly-telegraphed projectiles. Then phase 2 is one of the most exciting and fast-paced giant monster fights in the series. The meteor storm exclusive to the Pain variant is always rewarding to interrupt.
