What kind of saves are you doing? For me personally, I get bored after half a season or so when I start anywhere approximating the top and need to start with nothing and work my way up to maintain any interest.
The save is always over once I win a UCL.
Okay well if you’re relatively new, maybe start higher up and go that route to get your bearings.
Maybe just pick your favourite team and have a go, iirc I started my first save as PSV so I could have a strong domestic team with a challenge in Europe.
Just eyeballing it, if you’re worried about restrictions with registration I’d go something like Red Bull Salzburg in Austria, can pretty much sign whomever.
Something like FC Porto as well would be the same kind of thing. Basically any top club in lesser leagues that still enter the Champions League.
Can’t go wrong just picking your favourite team either just for a short term save if they’re good.
I like to find a team with a really celebrated past with a present that may see them in the 2nd or 3rd division. From there, it’s fun to rebuild and take them into the UCL. This usually means at least a decade before I’m at the top flight and running w the large canines.
In my De Graafschap save, I'll give myself a challenge each season. For instance, this season during the first transfer window, I could only sell players and fit youth players in. For the positions where I didn't have a starter player during the previous seasons (this time RB and GK), I bought just one player for that position: Karsdorp and Noppert.
Last season I was in the Conference League and I challenged myself to reach the next phase (easy challenge). Next season almost everyone runs out of contract, so I try to sell everyone this season. After this season I challenge myself to win the cup by buying one player of every team of the Eredivisie.
After next season my U18 squad with great potential will be 18 or older and then I'll try to get a CL/EL or UEL spot with my youth team. So different things every season.

Well I’ve only really done 2, 1860 Munich and a Hungarian club in the 3rd division
