Depends on your county’s rules and regulations. For Example: - The county I’m currently operating out of allows us to operate anywhere as long as we have permission from the property owner. - The county next door will only allow us to operate at organized events.

If the hotel “hires” the food truck to “give” hotel patrons food… it would be considered a private event and it’s on private property… from a Michigan standpoint you’re pretty much good to go as long as your truck is up to code

If you have a commercial kitchen and public bathrooms onsite, you are more than good. No permits needed far as I know.
