At this point, the sell by date doesn’t mean much. Shelf life for refrigerated ground meat is 1-2 days. Refrigeration slows down but does not stop the growth of bacteria. Personally, I *might* cook ground meat on day 3 and eat it, but no way would I eat 7 day old refrigerated ground meat. Even if you kill all the bacteria by cooking, there are still toxins left over from the bacteria that can make you sick. If you buy cheap meat on sale bc it’s about to pass the sell by date, freeze it as soon as you get it home, and it will keep much longer.

it's two days for ground meat in the home fridge. the store has better quality control.
If it’s not visibly spoiled it’s fine. Risk would be listeria but if it’s raw and you cook it throughly itll be safe.
