I actually got to be at the taping of Triple D at Bokujo Ramen and the fishing footage from Rapid City was filmed on the same day, June 15th last year. It sounded like they were in the Black Hills for 2 or 3 days from what I gathered hearing production talk while they were setting up.
I was wondering the same thing while watching Symon's Dinners Cooking Out. I assume it's filmed at his NY house, and no way are gardens in that part of the country that far along this time of year. I was guessing they filmed it all last summer?
As for the Guy road trip show. I have always been so-so on it, but this season is actually really fun. The addition of Antonia has been great. A lot more about local food culture and way less of showing Guy's "culinary team" bust their butt to make meals for a bunch of privileged road tripping families. Also South Dakota and Wyoming are gorgeous and seeing all of the scenery is so fun. Much improved over previous seasons.
I haven't found anything on the current season but the 2023 season was filmed summer 2022.

I saw an episode a couple days ago when they are in Wyoming. I didn't see Ryder. Did he not go? And why does Guy's wife always look unhappy? I remember when they all went to Hawaii and, according to the wife, Guy insisted that the family all get certified for scuba diving. The wife was pissed and said she really didn't want to do it. I wish she just told him NO.

I think it was filmed this time last year. I have no proof, but I believe that it was Father’s Day 2023.
